LEMON-GARLIC CHUCK STEAK



This one is easy, fast, & inexpensive! We cook it on the stovetop in a cast iron pan, but the marinade makes the chuck steak so tender there’s no reason you couldn’t just grill it.

4 1/2" chuck steaks                                                                         2 Tbsp butter

4-5 cloves garlic (dice 2)                                                                  1 Tbsp olive oil

juice of 1 lemon

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

 

1)Pat steaks dry & sprinkle both sides with salt, pepper, & paprika

2)Rub with diced garlic & lemon juice

3)Wrap with plastic wrap or put in a zip bag & let it sit for at least 30 minutes & up to 2 hours (I haven’t had any problems with longer!)

4)Heat a big, heavy-bottom skillet over med-high heat & add the butter, olive oil, & remaining garlic

5)When pan is hot, add the steaks & sauté for 3 minutes per side (adjust depending on thickness of steak & desired doneness)

6)Give one more squeeze of lemon before removing to plate
