Oven Cube Steak
Ingredients:
- 2 # cube steak
- 8 oz fresh mushrooms, thickly sliced
- 2 tbs beef tallow (or your favorite high heat oil)
- 32 oz. beef stock
- 3 tbs butter
- Seasoned flour for dredging: 1 C flour, 1/2 tsp each salt, garlic powder, fresh ground pepper
- Preheat oven to 350F
- Mix the seasoned flour ingredients together, reserving ~ 1/4 C for thickening
- Heat 1 tbs oil in a large skillet over medium-high heat
- Dredge the steaks in the flour mix & brown ~ 4 minutes per side. Remove to a plate.
- To the pan add the other tbs of oil, saute mushrooms until browned, remove to a plate.
- In the same pan, add the butter & let it melt, whisk in the reserved flour to make a roux. Let it cook for about 2 minutes, stirring often.
- Whisk in the beef stock & stir until it thickens.
- In a 13x9 inch pan, place the cube steaks & mushrooms, and pour the gravy over. Cover tightly with foil and bake for 2 hours.
