QUICK KETO PORK STEW
1.5# pork stew meat (pork tenderloin or chicken breast work too)
5 oz. bacon
7 oz. mushrooms, sliced
5 oz. fresh green beans, trimmed into bite sized pieces
2 cloves garlic, chopped
salt & ground black pepper to taste
2 tsp dried rosemary
1 C heavy cream
1 tbsp (tamari) soy sauce
1) Prep the veggies & cut the pork into bite-sized pieces
2) Heat a large oven-safe skillet on medium-high. Place the bacon in the hot skillet & fry it until the fat starts to melt. Add the pork & garlic. Season with salt, pepper, & rosemary. Continue cooking a few more minutes. Add in the mushrooms & cook until soft.
3) Pour in the cream & soy sauce. Give it a taste and adjust the seasonings as needed. Add in the green beans, & let the stew simmer until the sauce thickens.
4) Serve hot!
Makes 4 servings as written. I made a bigger batch & didn't really measure anything!
